A Sicilian-style pesto made with tomato, basil and almonds – the famous Pesto alla Trapanese. Rich, savoury and slightly nutty, it’s ideal stirred through hot pasta with a splash of pasta water, spooned onto bruschetta, or used as a quick sauce for chicken or fish.
